THE INGREDIENTS

• 1 cup Freekeh (Smoked Green Wheat)
• 8 – 10  cups chicken or beef broth
• 1 tbsp. cooking oil
• 1 small onion, finely chopped
• Salt and pepper, to taste
• Cooked chicken (cut into small pieces

THE PREPARATION METHOD

• Rinse the freekeh, soak for 30 minutes and drain.
• Heat oil, saute chopped onions.
• Add the freekeh and stir fry for a few minutes.
• Add the broth and cooked chicken and bring to a boil.
• Lower the heat and simmer until the freekeh is done.
• Serve hot.
